Three island cuisines merging to represent my family history - I am an aspiring chef, born in the Dominican Republic, raised in Puerto Rico, with Mallorcan roots. This 3- course meal fuses these three cuisines with intensely flavored island cooking, mixing Mediterranean, Spanish, African, Taino, and New Latino cuisines. Starting off with a refreshing tamarind soda and delicious small bites that will transport you straight to a seaside food shack or "chinchorro". Next, for the main course, Mofongo! It´s origins still hotly debated by the two Caribbean neighboring islands where my family hails from, it is a perfect dish to represent me. Finally, to finish the meal on a sweet note, freshly-baked Mallorcan ensaimada pudding along with tropical flavors of coconut and passion fruit. I hope to be able to share my love for food and my family history with you in a beautiful loft setting near the beautiful Plaza España.
